Your main tasks

  • Prepare sushi, sashimi, nigiri, and other Japanese specialties to a consistently high standard.

  • Select, inspect, and properly handle fresh fish, seafood, rice, and Japanese ingredients according to quality and food-safety standards.

  • Prepare and maintain sushi rice, including seasoning, temperature, texture, and consistency.

  • Execute mise en place efficiently before each service, ensuring all ingredients, sauces, garnishes, and equipment are ready.

  • Maintain consistent presentation and portioning in line with the restaurant’s standards and menu specifications.

  • Develop and refine Japanese dishes and seasonal specials together with the Head Chef / Executive Chef.

  • Maintain excellent hygiene, HACCP, and food-safety standards throughout preparation, storage, and service.

  • Manage stock and minimize waste, including correct storage, rotation, portion control, and monitoring of high-value ingredients.

  • Coordinate with the kitchen and service teams during service to ensure smooth, timely, and consistent food delivery.

  • Maintain and improve professional Japanese culinary techniques, including knife skills, fish preparation, sushi craftsmanship, and knowledge of Japanese ingredients.

Your profile

  • Proven experience as a Sushi Chef and/or Japanese Chef in a high-end or 4-star restaurant environment.

  • Strong knowledge of Japanese cuisine, sushi, sashimi, nigiri, and traditional preparation techniques.

  • Excellent knife skills and ability to handle and prepare high-quality fish, seafood, and Japanese ingredients.

  • High attention to detail, presentation, consistency, and portion control.

  • Strong understanding of food safety, hygiene, HACCP standards, and proper food storage.

  • Ability to work efficiently under pressure while maintaining high culinary standards and teamwork.

  • Passion for Japanese cuisine, with creativity and willingness to contribute to menu development and seasonal specials.

  • Fluent in English. Any additional language is an advantage.
